Chicken Kofta

What is Chicken Kofta?

Chicken kofta is a traditional dish hailing from the Indian subcontinent, known for its rich blend of spices and tender meatballs. These delectable koftas are typically made from ground chicken mixed with a variety of spices, herbs, and binding agents, then shaped into small balls and cooked to perfection. The result? A dish that’s bursting with flavor and sure to leave your taste buds tingling with delight.

  • 500g ground chicken
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust according to your spice preference)
  • 2 tablespoons of fresh cilantro, chopped
  • 1 tablespoon of fresh mint, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of garam masala
  • Salt to taste
  • 2 tablespoons of vegetable oil
  • Wooden skewers (if grilling)
  • For the sauce:
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup of yogurt
  • 1 teaspoon of red chili powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of ground cumin
  • Salt to taste
  • Fresh cilantro for garnish

  1. In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, grated ginger, green chili, cilantro, mint, ground cumin, ground coriander, turmeric powder, garam masala, and salt. Mix well until all the ingredients are evenly distributed.
  2. Once the mixture is well combined, take small portions of the mixture and shape them into small balls or cylinders. If the mixture is too sticky, you can wet your hands with water to prevent sticking.
  3. Heat vegetable oil in a large skillet over medium heat. Once the oil is hot, add the chicken koftas in batches, making sure not to overcrowd the pan. Cook the koftas for about 6-8 minutes, turning them occasionally, until they are golden brown and cooked through.
  4. If you prefer grilling, you can skewer the koftas onto wooden skewers and grill them over medium-high heat for about 10-12 minutes, turning them occasionally, until they are cooked through and have a nice charred exterior.
  5. While the koftas are cooking, prepare the sauce. Heat a tablespoon of vegetable oil in a separate pan over medium heat. Add the finely chopped onion and cook until translucent.
  6. Add the pureed tomatoes to the pan along with the red chili powder, turmeric powder, ground cumin, and salt. Cook the sauce for about 8-10 minutes, stirring occasionally, until it thickens slightly.
  7. Once the sauce has thickened, reduce the heat to low and stir in the yogurt. Cook for an additional 2-3 minutes, being careful not to let the sauce come to a boil.
  8. To serve, arrange the cooked chicken koftas on a platter and pour the warm sauce over the top. Garnish with fresh cilantro and serve hot with naan bread or steamed rice.
